typical, at lunchtime today this coffee was just on song in terms of really nice naked pours with no effort at all
come to capture it tonight, and a very different story – hadnt touched the grinder settings, dumped the first two doses out of the grinder to get into the fresh stuff, even double checked the electronic dosage with manual weigh, which wasnt necessary
the only difference was we only had enough coffee left in the hopper for 4 double shots (after the first 2 were dumped to ensure we were not running stale coffee) – i am absolutely sure, as previously mentioned, that grinders dont work properly unless they have a weight of beans on top
to this end i think my short hopper may be about to be switched for the big boy so i can dump kilo bags in and just get on with it rather than all the poncing around
when you need to pull quite a few shots in a typical day the single dosing regime really starts to chafe
i’ve painted myself into a little bit of a corner in that ive cut through all the coffee in the house that has rested long enough to be ready to drink
as a general rule for espresso at least, you want to leave it two weeks post roast date before you use it – not only will it taste better, but you will find it much easier to work with too in terms of getting a nice pour, assuming the beans in the bag were actually roasted on the date that is stamped on the bag of course
i also need to turn down the brightness of the LED light box – i think i had it turned up slightly too high and it is washing the colour out of the pour slightly. if you time 27 seconds from when this shot first drops until when you hear me pull the cup, 25mL of espresso was delivered into the cup in that time (excluding crema). the dose was 17.3g. the beans were roasted on 3 January 2014.
