It is probably self evident, however it must be said that I prize simplicity and not making the task more difficult than it needs to be. In short, I am opposed to the vast array of coffee paraphernalia that is on offer. If I can eliminate any of it I will.

any time your espresso performance drops off cam make the effort to get out these two simple yet essential tools of espresso making and target 27g of espresso in 27 seconds. if you have been reading my blog for a while you will know that I believe there is far too much emphasis on tangling yourself in convoluted coffee rituals espoused by others in the name of achieving the god shot. instead I put all my efforts into helping people eliminate sink shots; to develop simple routines that basically anyone can consistently achieve espresso shots that they are ‘very happy’ with as a minimum standard. I have no time or interest in proclaiming, or indeed listening to, convoluted techniques that claim to yield spectacular results.

every time you change to a new bag of coffee please, make the effort to get out the scales and time the shot.
