what is the one simple thing you can do to improve your espresso more than anything else?

stop hopping from one bean to another!!! please! do yourself a huge favour and desist, at least just for a month

ive written about this before and i suspect little notice has been taken

if you are opening a bag of coffee, taking out 20g of beans, doing a little shot, then rolling that bag down tightly and moving to another bag, either opening it or having it already open and taking 20g out of that you are making life extremely difficult for yourself

please, and im almost begging you here, choose a bean and stick with it for a minimum of 10 days

you will find you get exponentially better results by the end of the 10 day period, and if youre not tired of the taste put some more of the same in and key working with it

how do you think professional baristas deliver you a great coffee? i’ll tell you for absolute certain, not one of them is hopping from bean to bean to bean

it is absolute and utter madness and seems to afflict home baristas in their droves

please, for your own enjoyment, stop this hideous self destructive practice now – you are making your learning curve impossibly steep and if you are anything like most people inflicting this misery on themselves they keep blaming their gear, and changing and churning and upgrading

please, please desist this daft practice. it is making your life a misery!

without wanting to sound to zen & purple crystals about it, if you havent stuck with one coffee long enough to know exactly how to tweak each extraction just by looking at the way the extraction progresses and the colour and texture of the crema, then you need to stick with that roast until you develop and instinctive feel for that roast

when you know a roast you look at it and think, ah, running a bit quick, i need to move my grinder by exactly ‘this much’ and you should be bang on with that one adjusment

please force yourself to buy 1Kg of any given coffee and just run with it

the only difference between the results you get and a pro barista gets is practice, but with the same coffee!!!

please please try my suggestion for a while and experience the difference

coffee making should be a intuitive process if you know your gear and your coffee to the extent that you should

once you achive that you will see the taste of your results improve exponentially, almost as if by magic
