Another email extract from our customer with the Scace, dated 10 March 2013:

I’m still trying to figure the machine out, but it’s made some very nice espresso.

Scace testing so far shows the brew temps start at ~206F to 211F, dropping 6F to 9F during an extraction.

Brew pressure seems to start around 6.5 bar, dropping to around 5 bar.

Not exactly Third Wave conventional wisdom for brew parameters, but who cares if the result is good?
